Tarte Aux Pommes

 

It's quarantine day...honestly, I'm not sure anymore. The days have started to blend together and I've found myself endlessly searching for new recipes to try to give me something to do.


I came across this recipe on the Laduree Instagram account for this divine treat! Recreating this apple tart is much easier than it seems, and what makes it better, is that it has a simple list of ingredients.

What you'll need -

20g butter
20g flour
20g sugar
1 apple
A few almonds
1/2 cup heavy cream (might need a splash or two more)
1 tsp honey
A few dashes of cinnamon


Start with creating the crumble. Combine the flour, sugar and butter into a bowl and mix with your hands. You don't want to mix it completely, but break down the butter pieces into small bits. Next, pour the crumble onto a baking sheet and bake on 350° F for 12-15 minutes.



While that is cooking away, you'll what to start caramelizing the apple. Start with cutting the apple into thin slices, making sure to cut the inner edge so that they have straight, clean lines. Melt some butter into a pan, then place the apple slices in. Sprinkle a pinch of sugar on top, and keep a close eye on them as they start to brown.



When both sides of the apple slices are browned, take them out and put them to the side. Take out the crumb as well and let it cool for ten minutes. Next, mix the cinnamon, honey and cream into a bowl, then whisk until the heavy cream becomes thick and fluffy!

Spoon your whipped cream into a food/pastry ring (or in my case, a tiny teacup), then cover with a generous layer of crumble.


Here is the fun part! Take your apple slices and start placing them on top of the crumble in the shape of a flower.


Cut a few almonds into pieces and sprinkle on top.
